My favorite meal of the day is breakfast. I like having breakfast at night too. Meaning.. I like eating my favorite yogurt and strawberries I shared with you here, cereal, some eggs etc. But, sometimes if not everyday, during the week gets a little complicated to do something a little more elaborated (not that this is too elaborated either). So on the weekends I like putting a little more energy on my favorite meal. This is my latest obsession to eat during the weekends:
Ingredients:
Eggs:
-1/2 Cup of chopped kale
-2 eggs
-3 Slices of Ham
-1 Small clove of garlic
-1 tspn Olive Oil
-Salt (I never add pepper to eggs for some reason, feel free to add it :))
-Whole Wheat English Muffin
-1 Provolone Slice
-2 Tomatoes Slices
In a pan, heat up the olive oil and toss kale. Add salt and let it cook for a minute, add chopped garlic and cook for 5 minutes or until kale is soft. Chop ham and add it to the kale, let it cook for a minute and add the eggs, add more salt if needed. While egg is cooking put English Muffin in the toaster. Once the eggs are cooked, build the sandwich by putting the slice of provolone first, the egg and then the 2 tomato slices. Put the sandwich in the oven for 2 minutes and enjoy!
The best part of breakfast during the weekend is getting to use your favorite utensils and table set ups! Plus enjoy a good Colombian coffee.
