A couple weeks ago my friends Juan and Britt from the gym gave me some mangoes. And, the first thing that came to my mind was to make ceviche. My boyfriend doesn't like sea food (I KNOW!) So, this big bowl of ceviche that you see here I ate by myself (Not in one meal of course). It was so good and the colors are so cute that I had to share it here. It is very easy. It's all about chopping the ingredients and seasoning with a couple things. I hope you like it, specially for this summer it would make a great dish.
Ingredients (This makes 4 portions):
1 Mango
1/2 Red onion (Mine was a BIG onion)
1 and a half red bell pepper
1 Jalapeño
1 Avocado
1 lb cooked shrimp
1 and a half Tbspn chopped cilantro
2 limes
Salt & Pepper
Cayenne pepper
So, the preparation for this is extremely easy. I bought the shrimp uncooked so I boiled it for 4 minutes with some salt and then took off the shelf and cleaned them. You can buy the shrimp that comes cooked already and would be way easier. Then, chop the red pepper, jalapeño, and mango. Chop the onion and I like to put it in hot water to take some of the strong taste out of it. Then, put it in iced cold water. Drain the onions and mix all the ingredients. Add the lime, cliantro, salt and pepper to taste and cayenne if you want some heat. Add the shrimp to your mix and let it sit in the fridge for 15mins to half hour so all the ingredients mix well. Then add the avocado and serve it with some tortilla chips! (or some tostones if it's your cheating day, yum)
