Yesterday I mentioned that my Mom is here visiting. She is an amazing cook and loves making stuff while I am working. Yesterday, she made a delicious spinach and ricotta cheese quiche. It might not be the healthiest but I love cheating a little with my mom's food. Here is the recipe. Enjoy!
INGREDIENTS:
CRUST
-All purpose flour 240 gr
-Unsalted Cold Butter 120 gr
-Pinch of salt
-6 tbsp of cold water
(You can also buy the crust at the supermarket)
FILLING
-Baby Spinach 1 bag of 170 gr
-Ricotta Cheese 1/2 cup
-Garlic 1 clove
-Butter 1 tsp
-Half & half 1/2 cup
-Oregano 1/2 tsp
-Shredded Mozzarella 1/2 cup
-Eggs 3
-Salt
-Pepper
DIRECTIONS
In a food processor mix ingredients for the crust. Once is all mixed, roll into a ball and wrap in plastic wrap and refrigerate for 1 to 2 hours. Then, roll dough on a floured board or counter into a circle. Fold the dough in half, place in a pie pan, and unfold to fit the pan. Pinch dough with a fork.
Preheat oven to 350 degrees F.
For the filling, saute spinach with butter, garlic, salt and pepper to taste. Let it cool for a while and layer the spinach in the bottom of the crust and add a layer of ricotta cheese, oregano, salt and pepper. Combine beaten eggs and half & half, again add salt and pepper to taste. Pour mixture on top. Finally, add shredded cheese. Bake for 25-30 min until crust is hard and egg mixture set.
